Nan's Meatloaf

Easy. Comfy. Yummy. My grandma Nan shared this recipe with me and I love to make it on a cozy day.

INGREDIENTS:
  • 2 lbs ground beef
  • 2/3 cup oats
  • 2 tablespoons ground flax seed
  • 1/2 large onion (chopped)
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 cup tomato sauce if too thick

INSTRUCTIONS:
  • Preheat oven to 35 degrees.
  • Mix all ingredients in a large bowl by hand.
  • Evenly spread in loaf pan.
  • Bake for 1 hour
  • Pour off grease and bake for an additional 20 minutes.
Serve with Mashed Potatoes and Roasted Balsamic Asparagus
